Let’s face it – “nourish bowls” are just a way of convincing ourselves we can throw our favourite foods together haphazardly and call it a meal; and I love them for that. I go through phases when it comes to the level of effort I’m willing to exert on a meal, and 2020 has this at an all-time low. But, as much as we may want to throw all healthy habits out the window entirely, I know that I feel physically and mentally better when I continue to implement nourishing meals into my day. This chipotle nourish bowl does exactly that, and tastes incredible too – it’s a win-win.

Nourish bowls (a.k.a Buddha bowls, macro bowls, salad bowls, rainbow bowls…) also make it easy to construct a meal you know is ticking all the boxes, and in the same way are totaly adaptable and easy to constantly switch up. When I’m throwing one together I think through – protein, healthy fat, colour (i.e. micros), texture, flavour; like a checklist I need to complete. If you work through those, I promise you you’ll be onto a winner. In this case, this amounted to chicken (protein); avocado (healthy fat), pickled red cabbage, cherry tomatoes, carrot, spinach (as many colours as possible); crunch from veg and seeds, creaminess from avo, bite from chicken; plenty of seasoning on chicken, fresh herbs and homemade zesty, spicy dressing (flavour).

Zesty Chipotle Nourish Bowl

Nourish Bowls are my go-to for a meal that ticks every box – ease, convenience, health, and flavour. Feel free to adapt as you go along to implement your most loved veg, or switch the chicken for a meat-free alternative (tofu would work great!).

Ingredients

  • Spicy Chipotle Marinade
  • Juice 2 limes

  • Juice 1 orange

  • 1/2 tsp chipotle paste

  • 4 cloves garlic, crushed

  • 2 tsp paprika

  • 2 tsp oregano

  • 2 tsp cumin

  • 1.5 tsp onion powder

  • Pinch salt

  • 1 tbsp honey

  • Zesty Lime Drizzle
  • 4 tsp chipotle paste

  • 2 cloves garlic, crushed

  • 1 small onion

  • Small handful coriander

  • 1/2 cup tahini

  • 1/4 cup olive oil

  • Juice 1 orange

  • Juice 2 limes

  • 1 tsp honey

  • Pinch salt

  • Water

  • For The Bowl
  • 2 chicken breasts for marinating, diced

  • Base – shredded lettuce, mixed greens or spinach would all work well

  • Carbs – brown or white rice, quinoa, cous cous or sweet potato

  • Colour & micros – grated carrot, tomatoes, picked red cabbage, avocado, black sesame seeds etc

Directions

  • Mix together all ingredients for the marinade. Place diced chicken breasts in a bowl and pour over the marinade. Cover bowl and place in the fridge to marinade – ideally do this overnight, or at least 1 hour.
  • When you’re ready to make your bowl, start by making the dressing by blending together all ingredients in a food processor or using a hand-held blender. Add water as needed to bring to your preferred consistency (I added approx 1/4 cup)
  • Depending on ingredients used, start to prep these – e.g. wash/chop veg; cook rice/potato/grains etc.
  • Meanwhile, heat a small amount of oil in a pan (or use non-stick). Dump your chicken pieces and marinade into the pan and cook through until no pink remains.
  • Once your chicken is fully cooked and ingredients are prepped, assemble your bowl as neatly or messily as you’d like. Finish by drizzling over the dressing and top with fresh herbs and seeds, or any other toppings you would like.
